It’s fair to say that we have been spoilt with a generous dose of sunshine over the past few weeks. Whilst we’ve resigned ourselves to the fact that we’ll have to make the most of British rays for the foreseeable, we won’t let it stop us from indulging in a sumptuous drink which is a little more exotic than a can of Diet Coke!

So, with World Cocktail Day on 13th May – perfect timing, wouldn’t you agree? – we needed no encouragement to get back in the kitchen to hone our mixology skills.

To celebrate, we asked Elys Food and Lifestyle Tastemaker, Sisley White to create a brand new recipe, especially for us, that requires just a few ingredients. Sisley’s blend takes just a couple of minutes to mix and packs a punch with the passion fruit giving a full burst of tropical flavour. Needless to say, it makes for a refreshing summery tipple which is sure to transport your mind to the faraway paradise you may be dreaming of.

Serves 1

1 passion fruit

50ml vodka

12.5ml lime juice

Lemonade or tonic

Ice cubes

  1. Pop a few ice cubes into a glass to chill it for a few minutes
  2. Half the passion fruit, pop one half on the side (you’ll need it for décor) and with the other, using a sieve, push through the pulp collecting the juice. Discard the pips
  3. Add the passion fruit juice to the chilled glass (remember to remove the ice cubes!) along with the vodka and lime juice
  4. Top up with lemonade or tonic and float the remaining passion fruit half on top to finish before serving

Simply hold the vodka for an equally satisfying mocktail version.
